Instructions
- Prepare the tzatziki by mixing yogurt, lemon juice, shredded cucumber, parsley, and salt in a bowl; refrigerate.
- Preheat the oven to 250°F and warm the pita on a baking sheet.
- In a bowl, combine diced cucumber, cherry tomatoes, lemon juice, salt, crushed red pepper, parsley, and mint.
- Preheat the grill or grill pan to medium-high heat and brush the squash with olive oil.
- Grill the squash for 2-3 minutes on each side until softened and marked.
- Assemble the gyros by spreading tzatziki on the pita, adding grilled squash, and topping with the salad and microgreens.
