Summer Squash Gyros with Tzatziki

Ingredients

Tzatziki Sauce

  • 1 container Stonyfield Organic Whole Milk Greek Yogurt
  • ½ lemon juice
  • 1 Persian cucumber trimmed and shredded
  • 1 tablespoon minced Italian parsley
  • a pinch salt

Gyros

  • 4 pita pockets
  • 2 to 3 summer squash ends trimmed and sliced lengthwise
  • to taste tablespoon olive oil
  • to taste salt
  • 2 Persian cucumbers diced
  • 1 pint cherry tomatoes, halved
  • 1 lemon juice
  • a pinch crushed red pepper
  • 1 tablespoon minced Italian parsley
  • 1 teaspoon minced mint
  • 1 bunch microgreen arugula or regular arugula

Instructions

  1. Prepare the tzatziki by mixing yogurt, lemon juice, shredded cucumber, parsley, and salt in a bowl; refrigerate.
  2. Preheat the oven to 250°F and warm the pita on a baking sheet.
  3. In a bowl, combine diced cucumber, cherry tomatoes, lemon juice, salt, crushed red pepper, parsley, and mint.
  4. Preheat the grill or grill pan to medium-high heat and brush the squash with olive oil.
  5. Grill the squash for 2-3 minutes on each side until softened and marked.
  6. Assemble the gyros by spreading tzatziki on the pita, adding grilled squash, and topping with the salad and microgreens.
