Chicken Sweet Potato Curry

Instructions
- Prep all ingredients by peeling and chopping the sweet potatoes.
- Combine all ingredients in a slow cooker or large stockpot and stir well.
- Set slow cooker to low for 7-9 hours or high for 6-7 hours, or simmer on stovetop for about 20 minutes until the chicken is cooked through and potatoes are tender.
- Stir and serve hot.
