Ingredients

The Salad Ingredients

  • 8 ounces rotini or bowtie pasta
  • 3 medium ears corn
  • 1 cup fresh cilantro leaves
  • 1 medium avocado
  • cup finely diced red onion
  • cup crumbled or grated Cotija cheese

The Dressing Ingredients

  • ¾ cup siggi’s whole milk plain yogurt
  • 3 tablespoons mayonnaise
  • 2 small limes (zest and juice)
  • 2 teaspoons chili powder
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the pasta in boiling salted water until al dente, then drain and cool.
  2. Roast the corn in a hot skillet with oil until it chars and becomes fragrant.
  3. Prepare the dressing by whisking together yogurt, mayonnaise, lime zest, lime juice, chili powder, salt, and pepper.
  4. Combine the cooled pasta with corn, cilantro, avocado, red onion, and Cotija cheese.
  5. Pour the dressing over the salad and gently mix to combine. Garnish as desired.
