Instructions
- Cook the pasta in boiling salted water until al dente, then drain and cool.
- Roast the corn in a hot skillet with oil until it chars and becomes fragrant.
- Prepare the dressing by whisking together yogurt, mayonnaise, lime zest, lime juice, chili powder, salt, and pepper.
- Combine the cooled pasta with corn, cilantro, avocado, red onion, and Cotija cheese.
- Pour the dressing over the salad and gently mix to combine. Garnish as desired.
