Greek Chicken Pasta Salad

Ingredients

  • 12 oz rotini pasta
  • 18 oz cooked chicken breast
  • 2 cups grape tomatoes
  • 1 large English cucumber
  • 1 cup kalamata olives
  • ½ large red onion
  • 8 oz feta cheese
  • 3 cloves garlic
  • 2 sprigs fresh oregano
  • ¼ cup fresh mint leaves
  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp olive brine
  • 2 lemons zested and juiced
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper

Instructions

  1. Combine all ingredients except feta in a large bowl and toss gently.
  2. Cover and refrigerate for 1 hour, tossing every 15 minutes.
  3. Add feta before serving and toss gently again.
  4. Top with extra feta and herbs for presentation.
