Ingredients

The salad

  • 8 ounces pasta
  • 1 medium cucumber
  • ½ medium red onion
  • 1 red bell pepper
  • 1 15-ounce can black olives
  • 1 cup grape tomatoes
  • cup crumbled feta cheese
  • to taste pepperoncini
  • to taste chopped salami
  • to taste chopped fresh oregano or basil

The dressing

  • 1 recipe Greek Salad dressing

Optional protein

  • ¾-1 pound raw chicken breasts

Instructions

  1. If using chicken, marinate it in ½ cup dressing for at least 4 hours.
  2. Grill the marinated chicken for about 7 minutes on each side until fully cooked.
  3. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  4. Drain the pasta and rinse it with cool water.
  5. In a large bowl, combine cucumber, onion, bell pepper, olives, tomatoes, feta cheese, and any optional ingredients.
  6. Add the cooked pasta and about 1 cup of dressing, tossing to combine.
  7. Chill the salad for at least 4 hours before serving.
