Greek Pasta Salad

The pasta salad

rotini or other small pasta

Instructions
- 1. Whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper in a bowl to make the dressing.
- 2. Add diced cucumber and sliced red onion to the dressing and marinate for at least 5 minutes.
- 3. In a large pot, boil 4 quarts of water with 1 tablespoon of salt, then cook the pasta until tender, about 8 to 10 minutes.
- 4. Drain the pasta, rinse with cold water, and drain again.
- 5. Combine the cooled pasta with the dressing, marinated vegetables, tomatoes, and olives, then toss well.
- 6. Sprinkle with feta cheese before serving.
