Ingredients

The dressing

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The pasta salad

  • 1 medium cucumber
  • ½ medium red onion
  • 1 pound rotini or other small pasta
  • cups grape tomatoes
  • ½ cup pitted kalamata olives
  • 4 ounces feta cheese

Instructions

  1. 1. Whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper in a bowl to make the dressing.
  2. 2. Add diced cucumber and sliced red onion to the dressing and marinate for at least 5 minutes.
  3. 3. In a large pot, boil 4 quarts of water with 1 tablespoon of salt, then cook the pasta until tender, about 8 to 10 minutes.
  4. 4. Drain the pasta, rinse with cold water, and drain again.
  5. 5. Combine the cooled pasta with the dressing, marinated vegetables, tomatoes, and olives, then toss well.
  6. 6. Sprinkle with feta cheese before serving.
