Vegan Carrot Ginger Soup

Ingredients

  • 1 pound carrots
  • 1 cup almond milk
  • 1 tsp fresh ginger
  • ½ tsp turmeric
  • ½ tsp ground pepper
  • 1 yellow onion onion
  • 2 cloves garlic
  • ½ tsp nutmeg
  • ½ tsp salt
  • 2 tbsp sunflower seeds
  • 1 cup water

Instructions

  1. Chop the carrot ends and cut them into chunks.
  2. Boil water in a large saucepan and add the carrots, cooking until tender.
  3. Sauté chopped onion and garlic in a pan until translucent.
  4. Once the carrots are cooked, drain them and place in a food processor with the other ingredients.
  5. Blend everything until smooth.
  6. Serve the soup in bowls, garnished with fresh ground pepper and herbs.
