Vegan Carrot Ginger Soup

Instructions
- Chop the carrot ends and cut them into chunks.
- Boil water in a large saucepan and add the carrots, cooking until tender.
- Sauté chopped onion and garlic in a pan until translucent.
- Once the carrots are cooked, drain them and place in a food processor with the other ingredients.
- Blend everything until smooth.
- Serve the soup in bowls, garnished with fresh ground pepper and herbs.
