Instructions
- Crack open a coconut and remove the flesh.
- Grind the coconut flesh in a food processor until fine.
- Warm the coconut milk and mix it with yeast, letting it rest briefly.
- Add sugar, salt, and coconut oil to the yeast mixture and mix well.
- Incorporate the flour and grated coconut, mixing until a dough forms.
- Knead the dough on a floured surface for about 3-5 minutes.
- Let the dough rest covered for about 20 minutes.
- Divide the dough into 4 pieces and roll each into a circle about 1-2 inches thick.
- Prick the dough with a fork and let it rest for another 10 minutes.
- Place the dough on a greased baking sheet and bake at 375°F for 20-25 minutes until lightly brown.
- Let it cool for 5 minutes before serving warm.
