Ingredients

  • 1 packet yeast
  • 1 cup coconut milk
  • ¼ cup coconut oil or melted unsalted butter
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 3 cups all-purpose flour
  • ½ - ¾ cup grated coconut or coconut flakes
  • 1 teaspoon grated nutmeg (optional)

Instructions

  1. Crack open a coconut and remove the flesh.
  2. Grind the coconut flesh in a food processor until fine.
  3. Warm the coconut milk and mix it with yeast, letting it rest briefly.
  4. Add sugar, salt, and coconut oil to the yeast mixture and mix well.
  5. Incorporate the flour and grated coconut, mixing until a dough forms.
  6. Knead the dough on a floured surface for about 3-5 minutes.
  7. Let the dough rest covered for about 20 minutes.
  8. Divide the dough into 4 pieces and roll each into a circle about 1-2 inches thick.
  9. Prick the dough with a fork and let it rest for another 10 minutes.
  10. Place the dough on a greased baking sheet and bake at 375°F for 20-25 minutes until lightly brown.
  11. Let it cool for 5 minutes before serving warm.
