Instructions
- Crack open the coconut and pry out the flesh, then cut it into small pieces.
- Pulse the coconut pieces in a food processor until finely ground and set aside.
- In a large bowl, combine the whole wheat flour and all-purpose flour.
- Mix the butter into the flour until a coarse meal forms.
- Stir in the grated coconut, brown sugar, baking powder, and nutmeg.
- Pour in the milk and mix until the dough clumps together.
- Divide the dough into three pieces and roll each into a circle about 1-2 inches thick.
- Prick the dough with a fork and let it rest for about 10 minutes.
- Place the rolls on a greased baking sheet and bake at 375℉ (190℃) for 20-25 minutes until lightly brown.
- Remove from the oven and let cool for 5 minutes before serving warm.
