Ingredients

Dry Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • ¾ teaspoon salt
  • ¾ cup grated coconut
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon grated nutmeg

Wet Ingredients

  • 3 tablespoons unsalted butter
  • ¾ cup milk

Instructions

  1. Crack open the coconut and pry out the flesh, then cut it into small pieces.
  2. Pulse the coconut pieces in a food processor until finely ground and set aside.
  3. In a large bowl, combine the whole wheat flour and all-purpose flour.
  4. Mix the butter into the flour until a coarse meal forms.
  5. Stir in the grated coconut, brown sugar, baking powder, and nutmeg.
  6. Pour in the milk and mix until the dough clumps together.
  7. Divide the dough into three pieces and roll each into a circle about 1-2 inches thick.
  8. Prick the dough with a fork and let it rest for about 10 minutes.
  9. Place the rolls on a greased baking sheet and bake at 375℉ (190℃) for 20-25 minutes until lightly brown.
  10. Remove from the oven and let cool for 5 minutes before serving warm.
