Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the butter, cane sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.
- Gradually add the flour mixture to the butter mixture, mixing after each addition.
- Fold in the coconut flakes gently.
- Scoop 2 tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10 to 12 minutes until golden brown around the edges.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
