Ingredients

  • 1 ⅓ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • cup cane sugar
  • cup light brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup sweetened coconut flakes

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the butter, cane sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.
  5. Gradually add the flour mixture to the butter mixture, mixing after each addition.
  6. Fold in the coconut flakes gently.
  7. Scoop 2 tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10 to 12 minutes until golden brown around the edges.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
