Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a food processor, blend peanut butter, coconut oil, and coconut sugar until smooth.
- Add eggs and vanilla, processing until combined.
- Sprinkle in baking soda, cinnamon, salt, and coconut flour, then process until a smooth dough forms.
- Fold in the chocolate chips gently.
- Scoop the dough onto the cookie sheet and flatten slightly.
- Bake for 7 minutes until edges are golden and cookies are soft.
- Let cool on the baking sheet for 3 minutes before transferring to a wire rack.
