Ingredients

The dough

  • ½ cup peanut butter
  • 2 tablespoons coconut oil
  • ½ cup coconut sugar
  • 2 large eggs
  • 1 ½ teaspoons pure vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ½ cup coconut flour

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a food processor, blend peanut butter, coconut oil, and coconut sugar until smooth.
  3. Add eggs and vanilla, processing until combined.
  4. Sprinkle in baking soda, cinnamon, salt, and coconut flour, then process until a smooth dough forms.
  5. Fold in the chocolate chips gently.
  6. Scoop the dough onto the cookie sheet and flatten slightly.
  7. Bake for 7 minutes until edges are golden and cookies are soft.
  8. Let cool on the baking sheet for 3 minutes before transferring to a wire rack.
