Ingredients

The vegetables

  • 3 pieces tomatoes, chopped
  • 1 cup mixed bell peppers, chopped
  • 1 cup spinach
  • 2 pieces carrots, chopped

The sauce

  • ½ tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 1 clove fresh garlic, minced
  • ¼ teaspoon fresh ginger, minced
  • 1 splash red wine vinegar
  • 1 pinch cayenne pepper (optional)
  • to taste fresh or dried parsley

The grain

  • 1 cup noodles, lentils, rice, etc.

Instructions

  1. Chop all vegetables and add them to a large skillet.
  2. Combine the sauce ingredients (lemon juice, EVOO, garlic, ginger, cayenne, vinegar) and stir well.
  3. Cook the mixture on low-medium heat for 15-20 minutes.
  4. Serve the stir-fry over a bed of grains.
