Instructions
- Heat the olive oil in a large pot over medium heat and sauté the onion for 3 minutes.
- Add the carrots, parsnips, and celery, and sauté for another 5 minutes.
- Stir in the garlic, turmeric, and ginger, and sauté for 1 minute.
- Pour in the broth, water, lentils, salt, and pepper; bring to a boil.
- Reduce heat to low and simmer covered for 15 minutes.
- Remove from heat and stir in the greens, parsley, and lemon juice.
- Cover and let the greens steam for a few minutes before serving.
