Healing Immune Boosting Soup

Ingredients

The base

  • 2 tbsp extra virgin olive oil
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 medium parsnips, chopped
  • 3 stalks celery, finely chopped
  • 6 cloves garlic, minced
  • 2 tbsp fresh ginger, minced
  • 1 tsp dried turmeric
  • ¾ cup red lentils
  • ½ tsp sea salt
  • 4 cups vegetable broth
  • 2 cups water

The finishing touches

  • 2 cups kale or spinach, finely chopped
  • 2 tbsp fresh parsley
  • 1 small lemon, juiced

Instructions

  1. Heat the olive oil in a large pot over medium heat and sauté the onion for 3 minutes.
  2. Add the carrots, parsnips, and celery, and sauté for another 5 minutes.
  3. Stir in the garlic, turmeric, and ginger, and sauté for 1 minute.
  4. Pour in the broth, water, lentils, salt, and pepper; bring to a boil.
  5. Reduce heat to low and simmer covered for 15 minutes.
  6. Remove from heat and stir in the greens, parsley, and lemon juice.
  7. Cover and let the greens steam for a few minutes before serving.
