Instructions
- Heat olive oil in a large pot over medium-high heat and sauté onion, celery, and carrots for about 5 minutes.
- Add mushrooms and garlic, cooking for an additional 3 minutes.
- Stir in chicken stock, bay leaves, turmeric, crushed red pepper, sea salt, and chickpeas; bring to a boil.
- Mix in shredded chicken, cover, and reduce heat to a simmer for 15 to 20 minutes.
- Add kale and simmer for another 5 minutes, then discard bay leaves and serve.
