Ingredients

The base

  • 1 tablespoon extra-virgin olive oil
  • 1 yellow onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 5 cloves garlic, minced
  • 1 ½ inches fresh ginger, minced (about 1 heaping tablespoon)
  • 1 ½ teaspoons ground turmeric
  • 1 ½ teaspoons dried thyme (or 1 teaspoon freshly chopped rosemary)
  • 6 cups water
  • 1 cup dry green or brown lentils
  • 2 teaspoons fine Himalayan salt, divided
  • freshly ground black pepper

The garnish

  • 1 cup fresh cilantro, chopped
  • 1 tablespoon freshly squeezed lemon juice (or to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion, carrots, and celery; stir until softened, about 5 minutes.
  3. Add garlic, ginger, turmeric, and thyme; stir until fragrant for about 1 minute.
  4. Immediately add water to prevent burning the garlic.
  5. Stir in lentils, 1 teaspoon salt, and black pepper; bring to a boil.
  6. Lower heat to a simmer, cover, and cook until lentils are tender, about 30 minutes.
  7. Once lentils are tender, add remaining salt, cilantro, and lemon juice.
  8. Adjust seasoning to taste and serve warm.
