The garnish

fresh cilantro, chopped

freshly squeezed lemon juice (or to taste)
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion, carrots, and celery; stir until softened, about 5 minutes.
- Add garlic, ginger, turmeric, and thyme; stir until fragrant for about 1 minute.
- Immediately add water to prevent burning the garlic.
- Stir in lentils, 1 teaspoon salt, and black pepper; bring to a boil.
- Lower heat to a simmer, cover, and cook until lentils are tender, about 30 minutes.
- Once lentils are tender, add remaining salt, cilantro, and lemon juice.
- Adjust seasoning to taste and serve warm.
