Instructions
- Melt coconut oil in a large pot over medium heat, then add chopped onion and salt, cooking until translucent.
- Add zucchini, kale, broccoli, veggie broth, and water, ensuring the liquid covers the veggies. Bring to a boil, then simmer for 10 minutes until broccoli is tender.
- Turn off the heat and stir in garlic and ginger, covering the pot to let it cool slightly.
- Blend the soup in batches with parsley, cilantro, and a pinch of salt until creamy.
- Transfer blended soup to a storage container or pot and repeat until all soup is blended.
