Instructions
- Sauté onion in olive oil over medium heat for 5 minutes until fragrant and golden.
- Add ginger, garlic, and fresh turmeric, and sauté for 2-3 minutes until garlic is fragrant and golden.
- Add mustard seeds, cumin, coriander, and optional turmeric powder, and sauté for 1-2 more minutes.
- Add water, stock, and salt, then bring to a simmer.
- Add vinegar or citrus, taste, and adjust salt, lime, and spice level to your liking.
- You can refrigerate or freeze this base for later use.
- Add your choice of noodles, beans, or other ingredients, keeping in mind their cooking times.
