Ingredients

Candied Slivered Almonds

  • 1 cup raw slivered almonds

Strawberry Spinach Salad

  • 5 oz. fresh spinach
  • 1 lb. fresh strawberries, sliced
  • ½ cup feta crumbles
  • ¼ medium red onion, sliced

Poppy Seed Dressing

  • ¼ cup olive oil
  • 2 tablespoons plain, nonfat Greek yogurt
  • ½ tablespoon lemon juice
  • ½ tablespoon apple cider vinegar
  • 2 teaspoons honey
  • 2 teaspoons poppyseeds
  • teaspoon salt

Instructions

  1. Preheat the oven and prepare a baking sheet with nonstick spray.
  2. Spread the slivered almonds on the baking sheet, drizzle with maple syrup, and sprinkle with salt.
  3. Bake the almonds at 400ºF for 8 minutes.
  4. Prepare the poppyseed dressing as per the provided instructions.
  5. In bowls or meal prep containers, layer the spinach, strawberry slices, feta, red onion, and almonds.
  6. Drizzle with poppyseed dressing and serve.
