Ingredients

The cake

  • 2 ¼ cups almond flour
  • ½ cup tapioca flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 pieces eggs
  • ½ cup honey
  • cup olive oil
  • ¼ cup lemon juice
  • 2 tbsp lemon zest
  • 1 tsp vanilla

The glaze

  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • to taste optional lemon zest

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch cake pan, optionally lining the bottom with parchment paper.
  2. In a medium bowl, mix the almond flour, tapioca flour, baking soda, and salt.
  3. In a large bowl, whisk together the eggs, honey, olive oil, lemon juice, lemon zest, and vanilla until well combined.
  4. Gradually add the flour mixture to the wet ingredients, stirring until fully combined.
  5. Pour the batter into the greased cake pan and bake for 28-30 minutes or until a toothpick comes out clean.
  6. Let the cake cool before making the glaze by whisking together the glaze ingredients.
  7. Once the cake is completely cool, add the glaze.
