Instructions
- Preheat the oven to 350°F and grease a 9-inch cake pan, optionally lining the bottom with parchment paper.
- In a medium bowl, mix the almond flour, tapioca flour, baking soda, and salt.
- In a large bowl, whisk together the eggs, honey, olive oil, lemon juice, lemon zest, and vanilla until well combined.
- Gradually add the flour mixture to the wet ingredients, stirring until fully combined.
- Pour the batter into the greased cake pan and bake for 28-30 minutes or until a toothpick comes out clean.
- Let the cake cool before making the glaze by whisking together the glaze ingredients.
- Once the cake is completely cool, add the glaze.
