Ingredients

  • 1 3/4 cups cake flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • 3 large eggs
  • 1 1/4 cups granulated sugar
  • 2 tsp lemon zest
  • 1 cup extra-virgin olive oil
  • 1 cup whole milk
  • 1 Tbsp lemon juice
  • to taste optional powdered sugar
  • to taste optional nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch springform pan.
  2. Sift the cake flour, baking powder, baking soda, and salt into a bowl and whisk together.
  3. In a mixer, beat the eggs until foamy, then add sugar and lemon zest, whipping until fluffy.
  4. Slowly drizzle in the olive oil while mixing until well blended.
  5. Add half the flour mixture, then the milk and lemon juice, and finish with the remaining flour mixture.
  6. Pour the batter into the prepared pan and bake for 45 to 55 minutes.
  7. Cool for 10 minutes, then remove from the pan and let cool for at least 1 hour.
  8. Dust with powdered sugar before serving if desired.
