Instructions
- Preheat the oven to 350°F and prepare a 9-inch springform pan.
- Sift the cake flour, baking powder, baking soda, and salt into a bowl and whisk together.
- In a mixer, beat the eggs until foamy, then add sugar and lemon zest, whipping until fluffy.
- Slowly drizzle in the olive oil while mixing until well blended.
- Add half the flour mixture, then the milk and lemon juice, and finish with the remaining flour mixture.
- Pour the batter into the prepared pan and bake for 45 to 55 minutes.
- Cool for 10 minutes, then remove from the pan and let cool for at least 1 hour.
- Dust with powdered sugar before serving if desired.
