Instructions
- Preheat the oven to 350°F and prepare a 9-inch round cake pan with parchment and grease.
- In a large bowl, beat together sugar, eggs, and lemon zest until thick and lighter in color.
- Add olive oil, sour cream, milk, and lemon juice, mixing until well combined.
- Add flour, baking powder, and salt, mixing until no dry streaks remain.
- Spread the batter evenly in the prepared pan and tap lightly on the counter to remove air bubbles.
- Bake for 25 to 30 minutes until the top springs back and a toothpick comes out clean.
- Cool in the pan for 5 to 7 minutes before transferring to a cooling rack.
- Dust with powdered sugar before serving.
