Ingredients

  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon fresh lemon zest
  • cup extra virgin olive oil
  • ½ cup sour cream or plain Greek yogurt, room temperature
  • ¼ cup milk, preferably not skim, room temperature
  • 2 tablespoons fresh lemon juice
  • 1 ⅓ cups all-purpose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • to taste none powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch round cake pan with parchment and grease.
  2. In a large bowl, beat together sugar, eggs, and lemon zest until thick and lighter in color.
  3. Add olive oil, sour cream, milk, and lemon juice, mixing until well combined.
  4. Add flour, baking powder, and salt, mixing until no dry streaks remain.
  5. Spread the batter evenly in the prepared pan and tap lightly on the counter to remove air bubbles.
  6. Bake for 25 to 30 minutes until the top springs back and a toothpick comes out clean.
  7. Cool in the pan for 5 to 7 minutes before transferring to a cooling rack.
  8. Dust with powdered sugar before serving.
