Instructions
- Preheat the oven to 350°F and prepare a loaf pan.
- Whisk together the flour, baking powder, and salt in a bowl.
- Combine sugar and citrus zest in another bowl, rubbing the zest into the sugar.
- Mix yogurt, citrus juice, eggs, and vanilla into the sugar mixture until blended.
- Gently fold the dry ingredients into the wet ingredients and then fold in the olive oil.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50 to 55 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then unmold and let cool to room temperature.
- For the glaze, whisk powdered sugar with citrus juice until smooth and drizzle over the cooled cake.
