Orange Olive Oil Cake

Instructions
- Preheat the oven to 350°F and grease a 9-inch round cake pan with olive oil.
- In a small bowl, whisk together the gluten-free flour, baking powder, and salt. Set aside.
- In a large bowl, stir together the eggs, 1 cup of the coconut sugar, olive oil, orange juice, vanilla extract, and orange zest.
- Add the dry ingredients to the wet ingredients and stir just to combine.
- Place thin slices of oranges on the bottom of the greased pan and sprinkle with the remaining ¼ cup of coconut sugar.
- Pour the batter on top of the orange slices.
- Bake the cake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan on a wire rack for a few minutes, then carefully remove it from the pan to the cooling rack.
