Ingredients

Dry Ingredients

  • 1 ½ cups all purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • 3 large eggs
  • 6 oz Greek Yogurt
  • ¾ cup extra virgin olive oil
  • 1 tablespoon finely chopped rosemary
  • zest of one large orange
  • 3-4 strands saffron (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In one bowl, mix all dry ingredients thoroughly.
  3. In another bowl, blend all wet ingredients together.
  4. Combine the wet mixture with the dry ingredients and mix until just blended, avoiding over-mixing.
  5. Pour the batter into a prepared 9-inch round pan.
  6. Bake for 20-25 minutes, or until a knife inserted in the center comes out clean.
