Ingredients

  • cup all purpose flour
  • ¾ cup sugar
  • teaspoon baking powder
  • ¾ teaspoon salt
  • 3 units eggs
  • 1 cup extra virgin olive oil
  • ¾ cup yogurt
  • tablespoon fresh rosemary
  • 1 tablespoon orange zest
  • cup coarse sugar

Instructions

  1. Preheat the oven to 350°F and prepare a 9-10 inch baking pan with oil and parchment.
  2. Sift together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, olive oil, and yogurt. Add the orange zest and rosemary.
  4. Fold the wet mixture gently into the dry ingredients.
  5. Pour the batter into the prepared baking pan and sprinkle coarse sugar evenly over the top.
  6. Bake for 40-50 minutes until the internal temperature reaches 200°F.
