Instructions
- Preheat the oven to 350ºF and grease a 9-inch springform pan.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, whisk the eggs and gradually add the sugar, beating until thick and pale.
- In another bowl, whisk the orange zest, juice, and olive oil, then add to the egg mixture in thirds, alternating with the flour mixture.
- Pour the batter into the prepared pan and bake for 45-60 minutes until a toothpick comes out clean.
- Cool the cake on a rack for at least 15 minutes before removing it from the pan.
- Dust the top with powdered sugar before serving.
