Orange and Olive Oil Cake

Ingredients

The cake

  • cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon salt
  • 3 units eggs
  • cups sugar
  • 2 teaspoons grated orange zest
  • cup freshly squeezed orange juice
  • cup olive oil
  • 2 tablespoons Grand Marnier (optional)

For preparation

  • Butter for greasing the pan
  • Powdered sugar for dusting the top

Instructions

  1. Preheat the oven to 350ºF and grease a 9-inch springform pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, whisk the eggs and gradually add the sugar, beating until thick and pale.
  4. In another bowl, whisk the orange zest, juice, and olive oil, then add to the egg mixture in thirds, alternating with the flour mixture.
  5. Pour the batter into the prepared pan and bake for 45-60 minutes until a toothpick comes out clean.
  6. Cool the cake on a rack for at least 15 minutes before removing it from the pan.
  7. Dust the top with powdered sugar before serving.
