Instructions
- Preheat the oven to 180°C (350°F) and line a 9-inch cake pan with parchment paper.
- Beat the eggs and sugar together until fluffy.
- Add the milk and olive oil, then mix in the lemon zest and juice until smooth.
- Fold in the flour and baking powder until just combined.
- Pour the batter into the prepared cake pan and bake for 35 minutes or until a toothpick comes out clean.
- Cool the cake for 15 minutes before transferring it to a wire rack to cool completely.
- Dust the cooled cake with confectioners' sugar before serving.
