Instructions
- Preheat the oven to 375°F.
- Slice the sweet potatoes into ⅓-inch thick medallions and toss with olive oil, salt, and pepper.
- Spread the sweet potato slices on a baking sheet and bake for 20-25 minutes until tender and golden.
- Let the sweet potatoes cool after baking.
- Layer the sweet potato medallions in a baking dish, overlapping slightly, and sprinkle with lemon zest, ginger, cinnamon, and cloves.
- Cover the dish and refrigerate until ready to bake.
- An hour before serving, whisk together melted butter, maple syrup, milk, and bourbon.
- Drizzle the sauce over the sweet potatoes, sprinkle with Parmesan, cover with foil, and bake for 10-15 minutes.
- Uncover and continue baking until deeply golden and caramelized for another 15-20 minutes.
- Prepare the spicy pecans by sautéing them in melted butter, adding brown sugar, paprika, red chile powder, and cider vinegar, then baking for 4 minutes.
