Crispy Roasted Sweet Potatoes with Bourbon Maple Butter

Instructions
- Preheat the oven to 425°F.
- On a baking sheet, mix sweet potatoes, olive oil, 1 teaspoon cinnamon, 1 teaspoon vanilla, and a pinch of salt and pepper.
- Arrange the sweet potatoes in an even layer and roast for 20 minutes.
- Flip the sweet potatoes and roast for another 20-25 minutes until tender.
- In a skillet, melt 1 tablespoon butter over medium heat and toast the pecans with cayenne and remaining cinnamon for about 5 minutes.
- In a saucepan, combine the remaining butter, maple syrup, and bourbon over medium heat, bring to a boil, then simmer for 5 minutes and stir in the remaining vanilla.
- Remove the sweet potatoes from the oven and lightly mash them with a fork.
- Drizzle the sweet potatoes with the maple butter and return to the oven for another 5-8 minutes until crisp.
- Serve warm, topped with toasted pecans and additional maple butter.
