Ingredients

The sweet potatoes

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 ½ teaspoons cinnamon
  • kosher salt to taste
  • pepper to taste

The toppings

  • 1 cup raw pecans
  • ½-1 teaspoon cayenne pepper
  • 7 tablespoons butter
  • ½ cup maple syrup
  • 2-3 tablespoons bourbon
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 425°F.
  2. On a baking sheet, mix sweet potatoes, olive oil, 1 teaspoon cinnamon, 1 teaspoon vanilla, and a pinch of salt and pepper.
  3. Arrange the sweet potatoes in an even layer and roast for 20 minutes.
  4. Flip the sweet potatoes and roast for another 20-25 minutes until tender.
  5. In a skillet, melt 1 tablespoon butter over medium heat and toast the pecans with cayenne and remaining cinnamon for about 5 minutes.
  6. In a saucepan, combine the remaining butter, maple syrup, and bourbon over medium heat, bring to a boil, then simmer for 5 minutes and stir in the remaining vanilla.
  7. Remove the sweet potatoes from the oven and lightly mash them with a fork.
  8. Drizzle the sweet potatoes with the maple butter and return to the oven for another 5-8 minutes until crisp.
  9. Serve warm, topped with toasted pecans and additional maple butter.
