Bourbon Maple Pecan Sweet Potatoes

Instructions
- Preheat the oven to 400°F.
- Peel and chop the sweet potatoes into 1-inch cubes and place them in a baking dish sprayed with nonstick spray.
- In a small bowl, whisk together maple syrup, melted butter (or coconut oil), bourbon, vanilla, spices, and salt.
- Pour the mixture over the sweet potatoes and mix well to coat them.
- Cover the sweet potatoes with foil and bake for 15 minutes.
- Remove the foil, stir the potatoes, and bake uncovered for another 30 to 35 minutes, stirring halfway through.
- With about 10 minutes left, mix in the chopped pecans and return to the oven.
- Once tender, remove from the oven and let sit for a few minutes before serving.
