Bourbon Maple Pecan Sweet Potatoes

Ingredients

The sweet potatoes

  • 3 lb sweet potatoes

The glaze

  • 3 Tbsp butter (or coconut oil)
  • cup maple syrup
  • 2 Tbsp bourbon
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt

The topping

  • cup chopped pecans

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and chop the sweet potatoes into 1-inch cubes and place them in a baking dish sprayed with nonstick spray.
  3. In a small bowl, whisk together maple syrup, melted butter (or coconut oil), bourbon, vanilla, spices, and salt.
  4. Pour the mixture over the sweet potatoes and mix well to coat them.
  5. Cover the sweet potatoes with foil and bake for 15 minutes.
  6. Remove the foil, stir the potatoes, and bake uncovered for another 30 to 35 minutes, stirring halfway through.
  7. With about 10 minutes left, mix in the chopped pecans and return to the oven.
  8. Once tender, remove from the oven and let sit for a few minutes before serving.
