Maple Mashed Sweet Potatoes

Instructions
- Preheat the oven to 400ºF.
- Bake the sweet potatoes for 30-40 minutes until soft, or microwave for quicker prep.
- Let the sweet potatoes sit for 5-10 minutes after removing from the oven.
- Remove the skins and mash the potatoes in a mixing bowl until creamy.
- Fold in the coconut oil, cinnamon, nutmeg, maple syrup, and salt, then transfer to a baking dish.
- Top with candied pecan halves and a sprinkle of cinnamon.
- Return to the oven for 5-10 minutes to heat through.
