Maple Mashed Sweet Potatoes

Ingredients

The sweet potatoes

  • lbs. sweet potatoes or yams

The mash

  • 1 Tbsp. coconut oil, ghee or butter
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 2 Tbsp. pure maple syrup
  • ¼ tsp. salt

The toppings

  • ¼ cup chopped candied pecans
  • ¼ cup candied pecan halves

Instructions

  1. Preheat the oven to 400ºF.
  2. Bake the sweet potatoes for 30-40 minutes until soft, or microwave for quicker prep.
  3. Let the sweet potatoes sit for 5-10 minutes after removing from the oven.
  4. Remove the skins and mash the potatoes in a mixing bowl until creamy.
  5. Fold in the coconut oil, cinnamon, nutmeg, maple syrup, and salt, then transfer to a baking dish.
  6. Top with candied pecan halves and a sprinkle of cinnamon.
  7. Return to the oven for 5-10 minutes to heat through.
