Instructions
- Preheat the oven to 400°F.
- Peel the sweet potatoes if desired and cut them into 1-inch pieces.
- Place the sweet potato pieces in a casserole dish.
- Add maple syrup, melted coconut oil, cinnamon, and salt, and toss to coat.
- Bake uncovered for 20 minutes.
- Stir the potatoes and return to the oven for another 15 minutes.
- Continue stirring every 15 minutes until fork-tender, about 1 hour total.
- If using, stir in pecans and add lemon juice before serving.
