Glazed Sweet Potatoes

Ingredients

The sweet potatoes

  • 6 large sweet potatoes

The glaze

  • 2 tbsp olive oil
  • ½ tsp salt
  • 1 stick butter
  • 1 cup coconut sugar (or brown sugar)
  • cup maple syrup
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ground ginger
  • 1 tbsp orange zest
  • 2 tbsp fresh squeezed orange juice
  • 1 tsp vanilla
  • to taste chopped rosemary
  • to taste flaky sea salt

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. Peel and slice the sweet potatoes into ½ inch thick rounds, then add them to a large casserole dish along with olive oil and salt, tossing to coat.
  3. 3. In a saucepan, melt the butter over medium-high heat, then add coconut sugar, maple syrup, cinnamon, nutmeg, ginger, orange zest, and orange juice. Bring to a boil and let it boil for 2-3 minutes while stirring until thickened.
  4. 4. Remove from heat and stir in vanilla. Pour the sauce over the sweet potatoes and toss until fully coated.
  5. 5. Bake uncovered for 30 minutes, then toss the potatoes again to coat.
  6. 6. Cover with foil and bake for an additional 20-25 minutes, or until the sweet potatoes are fork tender.
  7. 7. Remove from the oven, scoop some extra juice from the bottom of the pan, and pour it over the sweet potatoes.
  8. 8. Top with rosemary and sea salt, then let cool for at least 10 minutes before serving.
