Glazed Sweet Potatoes

Instructions
- 1. Preheat the oven to 400°F.
- 2. Peel and slice the sweet potatoes into ½ inch thick rounds, then add them to a large casserole dish along with olive oil and salt, tossing to coat.
- 3. In a saucepan, melt the butter over medium-high heat, then add coconut sugar, maple syrup, cinnamon, nutmeg, ginger, orange zest, and orange juice. Bring to a boil and let it boil for 2-3 minutes while stirring until thickened.
- 4. Remove from heat and stir in vanilla. Pour the sauce over the sweet potatoes and toss until fully coated.
- 5. Bake uncovered for 30 minutes, then toss the potatoes again to coat.
- 6. Cover with foil and bake for an additional 20-25 minutes, or until the sweet potatoes are fork tender.
- 7. Remove from the oven, scoop some extra juice from the bottom of the pan, and pour it over the sweet potatoes.
- 8. Top with rosemary and sea salt, then let cool for at least 10 minutes before serving.
