Instructions
- Peel and slice the sweet potatoes into ½ inch thick slices and place them in a greased baking dish.
- Preheat the oven to 375°F (191°C).
- In a saucepan, combine butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger over medium heat, stirring until melted. Bring to a gentle boil for 2 minutes without stirring, then remove from heat and stir in vanilla extract.
- Pour the sauce over the sweet potatoes and toss to coat.
- Bake for 1 hour, stirring every 20 minutes. Cover with aluminum foil after the first 20 minutes to ensure even baking.
- After baking, sprinkle with rosemary and sea salt if desired, and let cool for 10 minutes before serving.
