Ingredients

The sweet potatoes

  • 5–6 medium sweet potatoes
  • 3–4 lbs sweet potatoes
  • ½ teaspoon salt

The sauce

  • ½ cup unsalted butter
  • 1 Tablespoon water
  • ¼ cup pure maple syrup
  • 1 cup packed light or dark brown sugar
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons orange zest
  • to taste chopped fresh or dried rosemary
  • to taste flaky sea salt

Instructions

  1. Peel and slice the sweet potatoes into ½ inch thick slices and place them in a greased baking dish.
  2. Preheat the oven to 375°F (191°C).
  3. In a saucepan, combine butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger over medium heat, stirring until melted. Bring to a gentle boil for 2 minutes without stirring, then remove from heat and stir in vanilla extract.
  4. Pour the sauce over the sweet potatoes and toss to coat.
  5. Bake for 1 hour, stirring every 20 minutes. Cover with aluminum foil after the first 20 minutes to ensure even baking.
  6. After baking, sprinkle with rosemary and sea salt if desired, and let cool for 10 minutes before serving.
