Lemon and Cinnamon Sweet Potatoes

Instructions
- Preheat the oven to 375°F.
- Boil sweet potatoes in cold water until tender, about 8 to 10 minutes.
- Drain and cool the sweet potatoes, then slice them into ¼-inch thick slices.
- Arrange the slices in a baking dish coated with cooking spray without overlapping.
- In a saucepan, combine apple juice, maple syrup, nutmeg, cinnamon, lemon zest, and sea salt, and bring to a boil.
- Simmer the mixture for about 8 minutes while whisking often.
- Stir in olive oil and lemon juice until the sauce thickens.
- Pour the warm syrup over the sweet potatoes and bake for 20 to 25 minutes.
- Serve immediately.
