Lemon and Cinnamon Sweet Potatoes

Ingredients

The sweet potatoes

  • 3 pieces sweet potatoes

The glaze

  • 1 ½ cups apple juice
  • cup maple syrup
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp grated lemon zest
  • ½ tsp sea salt
  • 3 Tbsp extra virgin olive oil
  • Juice of one half lemon lemon juice

Instructions

  1. Preheat the oven to 375°F.
  2. Boil sweet potatoes in cold water until tender, about 8 to 10 minutes.
  3. Drain and cool the sweet potatoes, then slice them into ¼-inch thick slices.
  4. Arrange the slices in a baking dish coated with cooking spray without overlapping.
  5. In a saucepan, combine apple juice, maple syrup, nutmeg, cinnamon, lemon zest, and sea salt, and bring to a boil.
  6. Simmer the mixture for about 8 minutes while whisking often.
  7. Stir in olive oil and lemon juice until the sauce thickens.
  8. Pour the warm syrup over the sweet potatoes and bake for 20 to 25 minutes.
  9. Serve immediately.
