Ingredients

The sweet potatoes and apples

  • 3 pounds sweet potatoes (about 4 large)
  • 2 cups peeled, cored, and diced tart baking apples (about 2 medium or 3 small)

The glaze

  • 1 cup roughly chopped pecans
  • 2 tablespoons unsalted butter
  • 2 tablespoons coconut oil
  • cup honey
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon kosher salt
  • ¼ cup whiskey

Instructions

  1. Preheat the oven to 375°F and scrub the sweet potatoes, then bake them for 45 to 60 minutes.
  2. Once cool, remove the skins and cut the sweet potatoes into chunks.
  3. Toast the pecans in a skillet, then add butter and coconut oil to melt.
  4. Stir in honey, cinnamon, nutmeg, salt, and cayenne, and let simmer for a few minutes.
  5. Add the whiskey to the mixture and let it simmer for an additional 5 minutes.
  6. In a greased baking dish, layer the sweet potatoes and diced apples, then pour the whiskey glaze over the top.
  7. Bake at 375°F for 20 to 30 minutes until the apples are fork-tender.
