Ingredients

The yams

  • 3 medium yams

The seasoning

  • 2 tablespoons olive oil
  • to taste none salt
  • to taste none fresh cracked pepper

The sweetener and nuts

  • 2–3 tablespoons real maple syrup
  • ½ cup pecans

Instructions

  1. Preheat the oven to 425°F.
  2. Slice the yams into ¼-inch thick rounds.
  3. Toss the yams with olive oil, salt, and pepper until coated.
  4. Spread the yams in a single layer on a parchment-lined sheet pan.
  5. Bake for 20 minutes.
  6. Mix pecans with maple syrup and a pinch of salt and pepper.
  7. After 20 minutes, scatter the pecan mixture over the yams and gently mix.
  8. Return to the oven for an additional 10 minutes until the edges caramelize and yams are tender.
  9. Serve warm, covered loosely with foil until ready.
