Instructions
- Preheat the oven to 425°F.
- Slice the yams into ¼-inch thick rounds.
- Toss the yams with olive oil, salt, and pepper until coated.
- Spread the yams in a single layer on a parchment-lined sheet pan.
- Bake for 20 minutes.
- Mix pecans with maple syrup and a pinch of salt and pepper.
- After 20 minutes, scatter the pecan mixture over the yams and gently mix.
- Return to the oven for an additional 10 minutes until the edges caramelize and yams are tender.
- Serve warm, covered loosely with foil until ready.
