Roasted Sweet Potatoes with Maple and Bacon

Instructions
- Preheat the oven to 425°F.
- Combine the sweet potatoes and onions in a baking dish or lined baking sheet.
- Toss with oil and maple syrup.
- Sprinkle uncooked bacon over the potatoes.
- Bake for 20 minutes, then stir and bake for an additional 10-15 minutes until tender and caramelized.
- Season with salt and pepper before serving.
