Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a mixing bowl, combine the red velvet cake mix, melted butter, and one egg to form a crumbly dough. Fold in crushed cookies and press into the pan.
- In another bowl, beat the softened cream cheese until smooth, then add powdered sugar, vanilla, and the remaining egg. Mix until creamy.
- Pour the cheesecake mixture over the crust and spread evenly. Bake for 30-35 minutes until edges are set and center jiggles slightly.
- Cool completely at room temperature, then refrigerate for at least 2 hours.
- Dust with powdered sugar and sprinkle reserved crushed cookies on top before slicing into squares and serving.
