Ingredients

Red Velvet Brownies

  • 2 large eggs
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ¼ cup unsweetened cocoa powder
  • teaspoon salt
  • teaspoons red gel food coloring
  • ¾ teaspoon white vinegar
  • ¾ cup all-purpose flour

Cheesecake Swirl

  • 8 ounces full-fat brick cream cheese
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare an 8-inch square baking pan.
  2. Beat the eggs in a small bowl and set aside.
  3. Melt the butter in a large bowl and mix in the sugar, vanilla, cocoa powder, salt, food coloring, and vinegar in order.
  4. Whisk in the eggs and fold in the flour until just combined.
  5. Pour most of the brownie batter into the prepared pan, reserving a few tablespoons.
  6. In another bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth.
  7. Dollop the cream cheese mixture over the brownie batter and top with the reserved brownie batter.
  8. Swirl the layers together with a knife.
  9. Bake for 28-30 minutes or until a toothpick comes out clean.
  10. Allow to cool completely before cutting into squares.
