Ingredients

The brownies

  • 1 cup chocolate chips, melted
  • 1 cup all-purpose flour
  • ½ teaspoon sea salt
  • 2 flax eggs or 2 vegan egg substitutes
  • ¾ cup brown sugar
  • ½ cup oil or vegan butter
  • ¼ cup water
  • 2 teaspoons vanilla extract or vanilla paste
  • 2-3 tablespoons natural red food coloring
  • 1 teaspoon vinegar
  • ¼ teaspoon baking soda

The vegan cream cheese frosting

  • 8 ounces vegan cream cheese
  • ½ cup vegan butter
  • 2 teaspoons vanilla extract or vanilla paste
  • pinch sea salt
  • 3-4 cups powdered sugar, sifted
  • ¼ cup cornstarch, sifted

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare an 8x8-inch baking pan.
  2. Melt the chocolate chips in a microwave or double boiler.
  3. In a medium bowl, whisk together the flour and salt.
  4. In another bowl, mix the flax eggs, sugar, and oil for about 2 minutes, then add water, vanilla, and food coloring.
  5. Combine the wet and dry mixtures, then stir in the melted chocolate.
  6. Mix vinegar and baking soda in a small bowl, then add to the batter.
  7. Pour the batter into the prepared pan and bake for 35 minutes.
  8. Cool the brownies completely, then chill in the fridge.
  9. For the frosting, beat the cream cheese and butter until smooth, then add vanilla and salt.
  10. Gradually mix in powdered sugar and cornstarch until desired thickness is reached.
  11. Chill the frosting for at least 4 hours.
  12. Frost the cooled brownies and refrigerate for at least an hour before serving.
