Ingredients

Red Velvet Brownies

  • 2 large eggs
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ¼ cup unsweetened cocoa powder

  • 1 Tablespoon liquid or gel red food coloring
  • ¾ teaspoon white vinegar
  • ¾ cup all-purpose flour

Cookies ‘n Cream Frosting

  • ¼ cup unsalted butter
  • cups confectioners’ sugar
  • 2-3 Tablespoons heavy cream
  • 6 Oreos crushed

Chocolate Ganache

  • 4 ounces semi-sweet chocolate
  • ½ cup heavy cream
  • 2 Tablespoons unsalted butter

Instructions

  1. Prepare the butter for frosting and ganache to come to room temperature.
  2. Preheat the oven to 350°F (177°C) and line an 8-inch square baking pan with aluminum foil.
  3. Beat the eggs in a small bowl and set aside. Melt the butter in a large bowl and mix in sugar, vanilla, cocoa powder, salt, food coloring, and vinegar.
  4. Whisk in the eggs and fold in the flour until incorporated. Pour the batter into the prepared pan and bake for 22-24 minutes.
  5. Allow the brownies to cool for 30 minutes, then refrigerate until completely cooled.
  6. For the frosting, beat the butter until creamy, then mix in confectioners’ sugar and heavy cream until thick. Fold in crushed Oreos and spread over the cooled brownies.
  7. For the ganache, break chocolate into pieces and heat the heavy cream until boiling. Pour over the chocolate and stir until smooth, then mix in butter.
  8. Spread the ganache over the frosted brownies and chill for at least 30 minutes before cutting.
  9. Cut into squares, wiping the knife with a wet paper towel between cuts to keep layers neat.
