Ingredients

Cookie Base

  • 1 ½ cups creamy peanut butter
  • 1 cup packed brown sugar
  • 2 tablespoons packed brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 ½ teaspoons vanilla extract
  • 1 ⅛ teaspoons baking soda
  • ¼ teaspoon table salt

Ice Cream

  • 2 cups heavy cream
  • 1 cup whole milk
  • ½ cup white sugar
  • 1 tablespoon vanilla extract
  • cup strawberry jam

Topping

  • 2 tablespoons creamy peanut butter
  • to taste fresh strawberries

Instructions

  1. Preheat the oven to 350°F and prepare the springform pan with parchment paper and nonstick spray.
  2. Mix all cookie base ingredients until combined, reserving a small amount of dough.
  3. Press the dough into the pan and bake for 10-11 minutes, while baking the reserved dough for 8-9 minutes.
  4. Allow the cookie to cool completely and then place it in the freezer.
  5. For the ice cream, whisk together cream, milk, sugar, and vanilla, then process in an ice cream maker.
  6. Spread the ice cream over the chilled cookie crust and dollop strawberry jam on top, swirling it in.
  7. Return the pan to the freezer for at least 4-6 hours until completely frozen.
  8. Before serving, garnish with strawberries, melted peanut butter, and crumbled cookie dough.
  9. Let the pizza sit for about 10 minutes to soften before slicing and serving.
