Cilantro Lime Quinoa with Black Beans

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon lime zest
  • 1 lime juice
  • 3 tablespoons fresh cilantro, roughly chopped
  • 3 cloves roasted garlic, smashed
  • 1 15 oz. can of low sodium black beans, drained & rinsed
  • to taste salt & pepper

Instructions

  1. 1. Bring water and quinoa to a boil.
  2. 2. Cover, reduce heat to low, and simmer for 15 minutes or until all water is absorbed.
  3. 3. Remove from heat and let stand for 5 minutes.
  4. 4. Fluff quinoa with a fork.
  5. 5. Add lime zest, lime juice, smashed garlic cloves, and black beans.
  6. 6. Toss together.
  7. 7. Add chopped cilantro and salt and pepper to taste.
  8. 8. Toss to combine and serve.
