Cilantro Lime Quinoa with Black Beans

fresh cilantro, roughly chopped

roasted garlic, smashed

15 oz.
can of low sodium black beans, drained & rinsed

salt & pepper
Instructions
- 1. Bring water and quinoa to a boil.
- 2. Cover, reduce heat to low, and simmer for 15 minutes or until all water is absorbed.
- 3. Remove from heat and let stand for 5 minutes.
- 4. Fluff quinoa with a fork.
- 5. Add lime zest, lime juice, smashed garlic cloves, and black beans.
- 6. Toss together.
- 7. Add chopped cilantro and salt and pepper to taste.
- 8. Toss to combine and serve.
