Cilantro Lime Quinoa

Instructions
- Combine the vegetable broth and quinoa in a large pot and bring to a boil.
- Cover the pot, reduce the heat, and cook until the broth is evaporated and the quinoa is tender, about 15 minutes.
- Remove from heat and let stand for 5 minutes, covered.
- Fluff the quinoa with a fork.
- Stir in the minced garlic, lime juice, and chopped cilantro.
- Season with salt and pepper to taste and serve warm.
