Cilantro Lime Quinoa

Ingredients

  • 2 cups vegetable broth
  • 1 cup quinoa, rinsed and drained
  • 1 clove garlic, minced
  • 2 tablespoons fresh lime juice
  • cup chopped cilantro
  • to taste salt and pepper

Instructions

  1. Combine the vegetable broth and quinoa in a large pot and bring to a boil.
  2. Cover the pot, reduce the heat, and cook until the broth is evaporated and the quinoa is tender, about 15 minutes.
  3. Remove from heat and let stand for 5 minutes, covered.
  4. Fluff the quinoa with a fork.
  5. Stir in the minced garlic, lime juice, and chopped cilantro.
  6. Season with salt and pepper to taste and serve warm.
