Ingredients

The quinoa

  • 1 cup uncooked quinoa

The liquid

  • 1 can full-fat coconut milk (13.5 oz)
  • Juice of 1 lime

The sweetener

  • 2 tsp honey

The herbs

  • ΒΌ cup cilantro, chopped

The seasoning

  • a pinch of salt

Instructions

  1. Rinse and soak quinoa in warm water for about 10 minutes.
  2. In a medium saucepan, whisk together coconut milk and honey, then add rinsed quinoa.
  3. Bring to a boil, cover, and reduce heat to a simmer, cooking until all liquid is absorbed (about 15-20 minutes).
  4. Turn off the heat and let quinoa sit for 5 minutes before fluffing with a fork.
  5. Mix in cilantro, lime juice, and a pinch of salt until combined, then serve.
