Ingredients

The salad

  • 3 cups quinoa (cooked or 1 cup dry)
  • ¾ cup dried fruit (raisins, golden raisins, chopped dried apricots, and dried currants)
  • ¼ cup pine nuts (toasted)
  • ¼ cup cilantro (chopped)
  • 1 each bell pepper (diced, any color)

The dressing

  • ¼ cup lime juice
  • ¼ cup olive oil
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 pinch salt

Instructions

  1. Combine all salad ingredients in a large bowl.
  2. In a separate bowl, whisk together all dressing ingredients.
  3. Pour the dressing over the salad and mix thoroughly.
  4. Store in an airtight container in the fridge.
