Ingredients

The Quinoa Salad

  • cups dry quinoa
  • 3 cups water
  • 1 cup Orange Basil Dressing
  • ½ cup finely diced red onion
  • 1 whole cucumber, chopped
  • 2 cups fresh spinach
  • 1 whole red bell pepper, chopped
  • to taste salt and pepper

The Orange Basil Dressing

  • ½ cup orange juice
  • ¼ cup apple cider vinegar
  • ½ cup olive oil
  • ¼ cup fresh basil, tightly packed
  • ½ teaspoon sea salt
  • 1 tablespoon honey

Instructions

  1. Combine dry quinoa and water in a saucepan, bring to a boil, then cover and reduce heat to cook for 15 minutes until water is absorbed.
  2. Fluff quinoa with a fork after removing from heat.
  3. Blend all dressing ingredients in a blender until smooth and emulsified.
  4. In a large bowl, toss quinoa with 1 cup of dressing and chopped vegetables.
  5. Season with salt and pepper, then marinate in the fridge for at least an hour before serving.
  6. Serve chilled or at room temperature.
