Citrus Basil Quinoa Salad

The Orange Basil Dressing

cup
orange juice

cup
apple cider vinegar

½
cup
olive oil
-
¼
cup
fresh basil, tightly packed

teaspoon
sea salt
-

tablespoon
honey
Instructions
- Combine dry quinoa and water in a saucepan, bring to a boil, then cover and reduce heat to cook for 15 minutes until water is absorbed.
- Fluff quinoa with a fork after removing from heat.
- Blend all dressing ingredients in a blender until smooth and emulsified.
- In a large bowl, toss quinoa with 1 cup of dressing and chopped vegetables.
- Season with salt and pepper, then marinate in the fridge for at least an hour before serving.
- Serve chilled or at room temperature.
