Lemon Basil Quinoa

Ingredients

  • 2 tb olive oil
  • 1 large shallot, finely chopped
  • 1 ½ cups quinoa
  • 3 cups water or broth
  • 3 whole lemons
  • 1 cup fresh basil, roughly chopped
  • 1 tsp sea salt

Instructions

  1. Sauté shallots in 2 tablespoons of olive oil in a medium pot.
  2. Once shallots begin to brown, add rinsed quinoa and water or broth.
  3. Bring to a low boil, then cover and simmer for 15 minutes.
  4. In a medium bowl, combine chopped basil, ¼ cup olive oil, sea salt, and juice from the lemons; stir well and set aside.
  5. When quinoa is done, fluff it with a fork and stir in the lemon basil sauce.
  6. Season with additional salt and pepper to taste.
