Lemon Basil Quinoa

Instructions
- Sauté shallots in 2 tablespoons of olive oil in a medium pot.
- Once shallots begin to brown, add rinsed quinoa and water or broth.
- Bring to a low boil, then cover and simmer for 15 minutes.
- In a medium bowl, combine chopped basil, ¼ cup olive oil, sea salt, and juice from the lemons; stir well and set aside.
- When quinoa is done, fluff it with a fork and stir in the lemon basil sauce.
- Season with additional salt and pepper to taste.
