Citrus Quinoa Salad

Ingredients

The quinoa

  • 1 cup quinoa
  • 1 cup vegetable broth
  • cup water

The salad

  • 3 peeled mandarin oranges
  • 1 cup grape tomatoes
  • ½ cup finely chopped red pepper
  • 2 tbsp rough chopped fresh basil
  • 1 cup cooked black beans

The dressing

  • ¼ cup extra virgin olive oil
  • 2 tbsp extra virgin olive oil
  • ¼ cup lime juice
  • ½ tsp Herbamare
  • 1 tbsp honey

Instructions

  1. Soak the quinoa in water for about 10 minutes.
  2. Bring vegetable broth and water to a simmer.
  3. Strain the soaking quinoa and add it to the pot.
  4. Simmer for about 14 minutes, or until most of the water is absorbed.
  5. Let the quinoa cool.
  6. In a bowl, combine mandarin oranges, grape tomatoes, red pepper, basil, and black beans.
  7. Whisk together the dressing ingredients.
  8. Add the cooled quinoa and dressing to the bowl with the other ingredients.
  9. Combine everything well and refrigerate.
  10. For best flavor, serve the next day.
